Nice Mandy! That looks like a nice way to spend an afternoon. Is any of that being pickled or going into preserves of some sort?

The big squash I have stuffed with a spicy pork, vegetable and rice mixture and it is in a low oven as we speak to have for tea. The other yellow squash are in the canner - I like them for soups, stews and a ratatouille mix that I will make when my aubergine are ready. Apple sauce is on the stove and will be canned.  Tne plums are quite tart so will go in a chutney with some curry spices and sultanas to eat with nice , mature cheddar cheese.
Oh my!

The aubergines are coming in. This 1st batch went into 14 jars if ratatouille along with our yellow zucchini,  some red peppers, onions and garlic. Canned for 20 mins at 12lbs.
