Anyone able to help me identify the parts on this stove? I know it was hand crafted in 1970s by my grandfather and I am currently trying to figure out what or how to operate the stove efficiently. I know the bottom dampers and the upper baffle , but I am I am unsure of the other parts to the stove. please help. thank you

Hi Shane! Welcome to Permies!
I'll give you my opinion of what it looks like to me. (I'm a relic of the 60's)

The two screw vents and the door vent are (as you know ), air intakes.
The small upper door is a clean out for the baffle.
The rod on top is no doubt an exhaust diverter .  Wide open to start (generally pushed in ) and after warming up , diverting the heat around the baffle in the warm position  (usually pulled out).
Wood cook stoves use a similar diversion design.
Without a hands on examination this is just my best guess.
