I would seriously suggest perusing the threads on this site around intentional community and related topics. As well as the website ic.org What you are envisioning is a type of community, and will be subject to the same dynamics and challenges. As you may have surmised, there are many many questions around sustainability that can best be addressed, and sometimes can only be addressed, by larger groups of people than a couple or a family off by themselves. The question is how to form and maintains such a group. There are several ways it can succeed, and rather more ways to crash it.
Good plan. There's some land up here near Bellingham that does a similar arrangement successfully. The Winters are too gray for me there but sunny Colorado is calling my name. I have a friend with land in New Mexico that I want to visit so am planning to check it out.
