Recommendations for temperature probes for data collection/graphing

Any suggestions for temperature probes I could set behind and under my RMH and bench to help me keep an eye on how hot it gets back there? This is for the purpose of long term discussions with the local fire inspector so the ability to have them wirelessly dump data into tracking software or spreadsheets/graphs would be great.

At the 48:50 mark in Matt Walkers Stove chat Episode 7, he talks a little bit about temperature sensors. Hope this helps and good luck with convincing your fire inspector the safety of your stove.
