Does anyone have experience oven drying cayenne peppers?

My peppers came on very late and I finally had to pick or lose them to freezing temps. Had them in a warm windowsill but that wasn't enough. They are a brilliant, beautiful red but still way too soft. Am afraid at some point they are just going to become moldy. Prefer them dried as opposed to possibly freezing them. They are beautiful in a red and white bowl I keep out for decoration and use all year. Also use them to adorn gifts when tying ribbons, and one friend (Tibetan) literally eats them dried like candy.

Thinking oven drying would be useful but not that many this year so don't want to lose any. Looking for that crinkled, bright red dried pepper look I normally get when drying in the heat of summer.

Thanks for sourcing. I did see many threads on brining, smoking and blackening. I simply want to oven dry them. Guess I'll test a few out first.

I didn't realize you wanted something simple.  Putting in a low temp oven works.  

I have even put them on the dashboard of a vehicle which also works.

One of the key things is just to keep turning them over occasionally.

Had they been red ripe in summer or early fall as they should have been, would have done that.  Too late now; 21 degrees here this morning! It's not until you move from zone 8 to zone 5 that you realize how dramatically different the weather zones in the US are.

Turning them is good advice.
