Comprehensive cob/natural building workshop or internship

Hi all!
I'd like to be able to attend a natural building workshop that is comprehensive or 'full build'. That includes foundation, walls, floor, plaster (interior & exterior), roof, framing, shelves, draining, electric wiring, dry composting toilets, water storage etc. I'm also open to interning with a natural builder (no wages) for a few months as it's understandable that there may not be a market for long workshops.
I trained as an architect at TAMU (specialized in healthcare- labs, hospitals & the like) but it has been many years since I actually built anything with my hands. I have never worked as a residential architect. The only natural building I did was as a kid & that was to help my grandparent's farm workers in India daub their walls with straw+mud & hand plaster their floors & inside walls with cow dung and that was over 30 years ago.
Any recommendations appreciated.
