Hi Kate,
What’s your opinion on the dig an hole and bury a mixture of kitchen scraps and brown leaves?

That sounds like a place to plant a plant in three months or so to me.  

You can also dig a trench, and beginning at one end and continuing down the trench as you have scraps to fill it with, dump your scraps mixed with mulch of some kind.  As this fills up the trench halfway to the top, (not from one end of the trench to the other but from the bottom to the top!), cover with soil.  Continue until the trench is full.  When the next planting season comes around, plant the trench with whatever is needed in that area.

I have heard other folks say that Ruth Stout talks about this method:
