In this episode, I discuss the medicinal properties of Burdock... this "common weed" probably does a lot more than you realize! I also tell you about one of my most favorite, simple meals. Have you ever had dried lima beans cooked with pork fat and cornmeal, topped with raw onions and hot sauce with cornbread on the side? If not, you have not yet lived... not a good life, anyway.

It isn't a recipe type of dish... soak a pound or so of dried limas.  Cook with water, salt and the fat of your choice... mine would be fatback.  Add some onion in to cook with the beans.  When about half done add 1/4-1/2 cup or so of cornmeal.  Cook until the beans get mushy.  Salt and pepper to taste.  Top with raw, chopped onions and hot sauce and eat with cornbread.
