kombucha carbonation and other issues

I'm a recent newcomer to making kombucha and have yet to be satisfied with the outcome. Mainly, I can't get my kombucha to carbonate itself even a little after bottling. I have left it out after bottling for as few as 3 days and as many as 6 days.

Also, the flavor has been off each time. Either very, very sweet or a good level of vinegary but with very little flavor (although before bottling I thought it tasted pretty good).

Any advice you could provide will be most appreciated!

I do continuous brew kombucha in a ceramic beverage dispenser. After 3-4 months, the kombucha started coming out of the ceramic dispenser already fizzy. I do usually put it in a quart bottle with some flavoring for a secondary ferment. I really like the continuous brew. The flavor is consistent (I taste a bit every day and decide if it's ready). It's always fizzy. It's very easy. I make concentrated sweet tea every few months. I pull 2-3 quarts off from my dispenser each week. When I pull a quart off, I add back in 3/4 cup of the sweet tea concentrate and 3 1/4 cups of filtered water.

It's worth the time to set this system up. It turns out to be a lot less labor intensive than making single batches. You can get different flavors in the secondary fermentation process.
