I was listening to a talk from a guy on this sort of topic. He reckons it isn't "we are what we eat", but rather "we are whom we feed". Some of the bacteria in our gut release certain chemicals which alter our mood, and even behaviour. Our very personality can be controlled by the ecosystem that lives within us. Hence the phrase.
