I cannot find it either. Let's talk about it again

I will have a look at Sandor Katz's The Art of Fermentation later. I wonder if the complex carbs they contain can be fermented to alcohol as is or if they need to be broken down before hand.

Hah, when this thread was posted I searched up and down the forums too and had no luck. I only have "Wild Fermentation" and found nothing useful in regards to this topic in it, hopefully Adrien will have better luck in Sandor's other book.

No luck in The Art of Fermentation, Sandor talks about lacto-fermenting them, but no alcoholic fermentation. So we have to find a bio-chemist to tell us if inulin can ferment directly to alcohol.
