Paul's "Pig In A Day" podcast was a real sleeper, and is now one of my favorites. Paul's guest, Brandon is quite an artist of "Meatsmithery", which is all aspects of making animals into food. I just saw he's running a Kickstarter to finish a butcher shop and slaughter truck that he and his family have started. http://kck.st/14KmTKB You should at least see the video.

For me, making meat is an ancestral skill, and at Brandon's level of mastery is endangered. So I kicked in a little. I think it is worthwhile to help people who teach important skills to get enough of a foothold that they can keep doing it.
