Well, I know you waited a year to hear this, so maybe you've already found it.  But Earthhaven Ecovillage is in Asheville, there are several places that I've found to be in NC.  There's an earthbag home in Asheville, cob homes near raleigh (Eno Community) and a few others (earthenacres.wordpress.com), and I'm hoping to do something here in the future in Charlotte. 
So far I've made an earthbag garden wall.
