So it's that time of year again and I've been tapping some of our birch trees. This is the second year I've tapped them and drank the sap as a 'spring tonic'. We don't bother cooking it down to syrup since it takes so much and we usually only get 10-20 gallons total.

I've basically replaced all the water I drink (2-3 quarts a day) with birch sap. It is supposed to be loaded with vitamins and minerals and even if it wasn't I would probably drink it for taste alone(it's like mineral water with just a hint of sweetness). My energy levels have been really high, but they usually are this time of year anyway when there is so much I'm inspired to do.

I'm wondering if anyone else has any experience with birch sap or with making tea from birch bark or twigs?

Just to be clear, this is Paper Birch I'm talking about.

They range anywhere from 8 to 12" in circumference.
