Hey all. LONG time lurker. Honestly not even lurking for years trying to get my own shit off the ground. Anyway. Have 4.98 acres with apple trees. Been a brewer in the past. Want insights into how to press and ferment apples. I LOVE notingham yeast and will be using it to eat the sugars along with yeast nutrient this time, but im open to input on that. Currently about to canabalize an OLD craftsman tablesaw engine into a grinder then planning to make a scissor jack cider press that I will run with a 20yo burly dewalt drill. Please link any awesome ideas I have missed or tell me why I am stupid. Thanks y'all. Hope to be more of a fixture here in the future. Life is hard. This has always seemed like a great community to belong to.

Are you wanting to make hard cider, rather than wine? Just checking as it's easy to leap to conclusions.

My understanding is that cider is normally made with the yeasts naturally present on the apple skins. I've only failed to make proper cider, but I have made pretty nice applecore cider on the way to applecore cider vinegar.

Some apple varieties are much easier to juice than others. I have 'Tom Putt' which happens to also be one of the few that also seems to crop reliable for me. You can eat is out of hand or cook with it, but really it is a good juicer/cider apple.
