I made venison meatloaf, boiled spuds and lettuce salad from my garden. It's all local, including the breadcrumbs, salsa and eggs in the meatloaf. Just the salad dressing and butter wasn't made by me.
12 spuds is 1320 cal.
2 lbs. Meatloaf is 1600 cal.
Salad with dressing is 600 cal.

Yesterday I made homeade enchiladas from scratch! The chicken was raised by me, the wheat tortillas were rolled out by me from local flour, even the sauce, which I've never made before, was made from tomatoes from my garden which I had freeze dried.
It was a lot of work, but I've been playing with the idea of just how many wonderful meals can be made at home.
Plus a salad from my homegrown lettuce, which is in full swing in the greenhouse. The pepper and cheese on one of the pans wasn't localally produced.
3800 cal estimated. 7 plates.

I made German pancakes and served them with cherry syrup. I used .my duck eggs and flour from the local organic farm. 1500 cal = 3 plates.

I made biscuits and gravy for breakfast again yesterday. 1 pound of deer sausage, 544 cal

12 biscuits from local flour. 1800 cal
The lard and milk I used wasn't local.

I'm very proud of my Easter Sunday spread. We colored duck eggs for the holiday, then made 2 dozen of them into deviled eggs. I was given steelhead fish and smoked it for dinner. Flat bread also was served along with honeycomb from my bees last year. Finally, broccoli shoots from the greenhouse garden rounded out a balanced meal 😋

Peaches and pudding for dinner. Includes my home-canned peaches, 11 peaches, 90 calories each= 990cal, and homeade vanilla pudding, 250 per recipe, which I quadrupled. 1000 cal. I used my duck eggs, the butter my kids made for a bb earlier this week, homeade vanilla and homeade plant milk, and the honey my bees produced. Only thing not locally produced was corn starch!
1990 cal, but I don't know how to total the syrup inside this jar, since my lids downed it before i could meaure. Im assuming it was at least 10 more calories, making at least 4 plates.

I baked up two of my chickens. I'll only count one here, since I'll use the other for chicken meals in the week. I boiled potatoes and steamed broccoli. The broccoli and butter served for the spuds wasn't local. 4,000 cal

I made enchiladas again, but only half as much as last time, since my big kids and hubby are away for a big track meet. The salad served had wild lettuce, dandelion, mallow, lambs quarters and lettuce, all of which I grew! Just the salad dressings weren't local.
1400 cal.

5400 calories is 10 plates.

German pancakes and berry syrup! It used 12 of my duck eggs for the pancakes and 2 cups of local flour. The almond milk I used for the batter was not local. I made the cherry syrup last year from my home-grown cherries, but the fresh blackberries I added in were not super local.
Two pans of pancakes: 2,832 calories
One quart of cherry, strawberry syrup: 2,260 cal
Total: 5,092 cal or 10 plates

Roast duck, boiled potatoes, giant salad.
I raised the duck. Opalyn helped me butcher it! The spuds are locally gleaned and the salad greens came from my greenhouse. I made a salad dressing for my salad out of homeade applesauce, maple syrup and tahini. But my family uses store bought dressings, pictured here.
Roast duck: 1800 calories (smallish duck)
8 big spuds: 1440 calories
Salad and dressing: 1,100 cal
4,340 total is 8 plates

My kids and I wanted to try making ravioli! The noodle pasta is made with local flour and my duck eggs. We used cashew cream cheese that I made earlier with onions, basil, Chives and mushrooms from my garden.
I served it with broccoli and homeade applesauce. The broccoli and olive oil were the only not local ingredients! 😁
1088 calories in the pasta, 600 in the stuffing, about 400 calories in a quart of applesauce. About 200 calories in 6 cups of broccoli. 2288 calories is 4 plates.

I've been on a healthy kick, with a fruit and veggie at every meal. Aiming to grow or forage all of them! 😁
First is a serviceberry bowl. It's got berries I foraged, sprouts I grew, some black beans and oats that are organic.

Second is deer sausage and flax muffin I made, cucumber I grew and cantaloupe from the farmers market.

Finally, cherry tomatoes and raspberries from my garden, waffle and sausage I made from local ingredients.

Here I've made elk burgers on homade buns. Potato fries. Just the cheese on some of the burgers wasn't local. 1400 calories  from 2 lbs. Of ground elk burger. 150 calories per bun x 20 is 3,000
Plus a few condiments, including my homeade pickles! 4500 cal is 9 plates

Calories for rhe muffins is 84 cal per muffin, 20 muffins makes 1680 or 3 plates.

Calories for crepes is 560 for crepes, 1400 for syrup, making over 2,000 cal. For 4 plates.

406 total plates that count for this bb so far! More than halfway done with this BB! And I'm comming into the harvest season, which makes fresh local food easier.

These lentil Flour pancakes are about 200 calories per chunky serving. Plus sprouts, leeks and mushrooms from my garden. Only the avocado isn't local. 500 calories

Chicken noodle soup. 1800 calories as previously stated. 3 plates.

Each applesauce muffins is 150 calories each. 20 muffins is 3,000 plus a handful of apricots is 100 calories per person. 8 people. 3800 calories or 7 plates.
