Graeme Sait, a permaculture/organics fella from the Australian permaculture scene has a series of videos on his Vimeo page that are full of great information. Sit up and listen if you have constipation issues, especially women--it can be not only uncomfortable but dangerous. This one is a fantastic, not-too-vulgarized-but-still-human explanation of the important interplay between bacteria, our digestive system, our immune system, toxins, and modern nutrition:

This guy is great. Well documented, with lots of charts. This whole academic area has blown up the last year or two. Michael Pollan wrote a hugely influential article about this in the New York TImes last year and David Perlmutter just started a new journal about the impact of our gut biology and it's interaction with the brain.
