Been culturing kefir for almost 2 years now, You can let it sit in the fridge uncultured for a few days no problem, it will still continue to work slowly, you may want to let it sit out a day once you pull it out and let it really finish before sifting out the grains and adding fresh milk. I plan on culturing milk for a long time, one of our favorite recipes is Sally Fallon's Cultured milk pancakes, the kefir is used to soak the flour overnight, but it's also a great base for smoothies. Milk kefir is super gut friendly.
