Does milk kefir kept in the fridge continue to ferment?

I have my second batch in the fridge. I'm lactose intolerant. Will the kefir continue to ferment and consume what's left of the lactose as it sits in the fridge? Or does the whole process stop?

The refrigeration slows down the fermentation, but doesn't stop it. Some research is coming out now about how fermented dairy products like kefir are much healthier for you than regular dairy. I have never noticed a difference in the kefir I have in the fridge whether I bought it that day or it is 1 or 2 weeks old. I always drink it before it gets 2 weeks old.

OK cool. I'll let it fester a few days in the fridge then =)

I forgot that to do the maturing process it needs to sit out and I put it in the fridge last night. Was hoping it would eventually finish off.

Is this kefir you made or kefir you bought? I was talking about kefir I bought at Trader Joe's.

I'm making my own kefir at home

In fact I've drank two smoothies now from the batches made over the last week. No adverse reactions to lactose so I'm sure it was all consumed in the fermentation process.

Been culturing kefir for almost 2 years now, You can let it sit in the fridge uncultured for a few days no problem, it will still continue to work slowly, you may want to let it sit out a day once you pull it out and let it really finish before sifting out the grains and adding fresh milk. I plan on culturing milk for a long time, one of our favorite recipes is Sally Fallon's Cultured milk pancakes, the kefir is used to soak the flour overnight, but it's also a great base for smoothies. Milk kefir is super gut friendly.
