Hi there i have tons and tons of cucumbers which im pickling, but it looks like we will have more than we could ever need to pickle.  Im looking for recipes other than for pickling anybody have any ideas?

my dad dehydrated some cucumbers with fresh dill pickle chips

my dogs 2will eat them if  i peel them and core them

If dehydrating, peel them-the skin tends to become bitter.  Enjoy dried slices as you would chips.  Good for dipping.

Sweet pickle relish.  How much do you use in a year?

To freeze, peel, shred and drain.  Can be added to moist breads such as spice bread or zuchinni bread.

Gazpacho.  You can put it up in jars or freeze it.

If you keep a running jar of fresh cuke slices as they come in from the garden, you can cover them with 1/2 rice vinegar and 1/2 toasted sesame oil (yummy!). Then you can always add herbs and spices to season the jar, like dill, garlic, and chiles.
