I have a bunch of pallets and was wondering If It would be possible to build a pallet house or building

It's been done. Google and youtube are your friends.

Seems like it's best suited for a shed rather than a home [though there have been Tiny Homes constructed that way.]

Actually... they'd make pretty good walls for animal housing because of the natural ventilation [assuming you aren't in a climate too cold for the animals in question.]
