After almost 3 months of waiting for the A-1 cows to birth ,  2 gallons of A-2 milk is being delivered today! Only two gallons available this week and the wife has claimed them both for butter and cooking this holiday. Darn ! I was ready to try cheese making again! Next week I may be able to get two cold for butter and two warm for cheese ... i'm hoping... My first cheddar making attempts earlier this summer did not pan out, but chevre and ricotta did . I,m anxious to try again, although I may try a farmhouse style cheddar this time. I'm also wanting to try making  a Gouda cheese so I can smoke it !  It's been a long 3 months reading my art of natural cheese making book and not having any real milk to work with!

OH NO !  Our milk was delivered monday, only got 1.5 gallons ... cold wet weather, short days ,more grain and less grass, all mean less milk ! That alone would not be the end of the world ...  spring is coming.    The BIG problem is my dairy man is closing !!! Selling all the cows and moving out of state !!! AHHH NO !!! I DON"T WANT YOU TOO !!! This is devastating news for the wife ! He would be glad to sell me the A-2 cow , its even bred. I can even afford it, but... I'm still working on the road and the wife is still doing craft fairs on the road...we just can't be tied down to a cow right now ! DANG IT !  We can still buy very expensive 1/2 gallons of A-2 in sandpoint and we have found a source of very good (but not cheap) goat butter. But darn it, we just located this awesome A-2 milk this summer and I want to make more cheese ! Now I guess we have no choice but to start searching again..... BUMMER !
