When I use my pans for yeast bread, I don't wash them. I take the bread out, let them cool, and put them back in the cabinet stacked upside down. I'm thinking of wiping them down with a damp rag, bu I've had no more problems with rust. Anybody else do this?

I use stainless steel steam table pans and treat them like cast iron. I grease them before use, and never clean the. As a result, they are seasoned, and are usually fine even if I forget to grease them, they have a polymerized oil finish that is largely no stick.

I've noticed the feeling, too. They seem to look nicer, too.
