Has anyone here sampled the Oaxacan Green Dent corn in the "green" or milk stage? Any other comments about this variety would also be of interest to me as would any experience with eating other varieties of dent in the milk stage.

I have eaten yellow dent corn like it was sweetcorn. It was not sweet of course, but I also thought it was bland. It was OK.It would probably be better when the kernels are very small. Roasting on a grill or adding spices would probably help a lot. I like good sweetcorn very plain. Boiled a few minutes, salt, real butter.

I found it gummy and starchy even when small or when ears are immature.

Still looking for info on Oaxacan Green dent corn (Ernest Strubbes Green, from Minnesota) in the immature stage as a sweet corn. Any new info out there?
