Jerusalem Artichoke, chop the tops?

In a homesteading class I took, I was told to chop first foot of the plant off when it starts to flower to keep the energy in root production.  But I thought the flowers would be important to the whole permaculture thing.

What say you? 

Chop some, don't chop some, see what works! Experiment!
