Brian, I am having trouble understanding you drawings.
But I saw this Youtube some time ago that describes lifting water with air bubbles using falling water and a whirlpool created with engineering, air was sucked into the water causing the areated water to rise up a smaller diameter pipe because the kinetic energy in both parts of the system was the same. This would allow water to rise in small volumes 6 Metres.

Peter, I have a bit of experience with the topic. My signature has a link to rainwater harvestinh. Perhaps read it and come back to be with questions.
For a start I would make theses suggestions for consideration;
- Have a storage tank which can hold 6 months supply of water
- fit a rainfall collection system that will work in your area.
- do you get snow etc, remember I live in rural Australia.
- dont bother about water treatment systems, a large storage tank will address that issue.
- dont mix city water with the other stuff, keep it separate.
- do you use much town water?
- fit first flush units to the roof gutters.
Tell me about the area.
- is it dusty?
- do you have trees around the house?
- what do you wish to use water on?
- how is water drawn from the creek?

I have found out this about the area.
- is one of the driest places in western Washington.
- 17" of rain a year, much the same as where I live.

I am going to suggest the following subject to a better understanding.
- draw water from the stream to fill a big tank, separate from the other sources of water.
- Direct all roof water to another tank if possible.
- the existing small above ground tanks could be used to catch water from remote sheds and pump it back to the large one.
- i would consider not using the well.
- you will be able to drink rainwater without treatment.
- Dont mix the different sources of water, mainly in case something goes bad, you can find the cause.

Rainwater can be used in the household
Creek water gardens and toilet flushing
Town water back up only.

Instead of looking at what gear you may need, why not write down what actions or gear would make life easier.
I am going to ask if a small truck or motorised wheelbarrow would be a good start?

Because thats what I found at my farm.

From Google
"A guniting machine, also called a shotcrete machine, is a construction device that pneumatically sprays a cementitious mix (gunite or shotcrete)
at high velocity onto surfaces for rapid, strong concrete application in tunneling, mining, and repairs,
working by feeding a dry mix (gunite) or pre-mixed (shotcrete) material through a hose for precise, high-pressure application."
Lime plastering is a different process and more suited to your application as Cristobal has explained.

Are you aware of the group WOOFERS?
It may work for you.
Cristobal, I wonder about the merits of drilling into mud walls through the top, bursting of the wall may occur.
Steel straps running down the wall vertically with a couple of bars through the wall say, 2 feet and 3 ft down from the top would be better to hold the roof down.
Of course a top plate of either termite proof timber or a concrete beam to carry any truss is a good idea.
Are you going to use the same style of roof design, posts etc in the middle and a ridge beam,
or clear span trusses across the room and battens on top?

Judith, there are pumps that use compressed air to push water up, they may work well for you, and as someone said, a good run with water removal may clean it up.
Where are you such that water is in short supply in the town?
Recharging ground water from a well casing is not a good idea, research that action.
