My wife raises Corgis, we have 38 adult dogs.  The poop gets collected a couple of time a week and we have been disposing of it in our garbage pit far from the house.  I've read of hugelculture, and systems where one digs a trench 2-3 feet deep, and throws in all sorts of biodegradables, including meat, offal, anything.  I had the idea of dumping the dog poop in a 2 1/2 foot deep trench, along with wood chips, the covering it all over, and letting nature compost it all.  I would not be planting earth produced veggies, such as potatoes or beets in the be.  Anybody have any idea whether or not this would be safe?

My own level of risk-aversion allows for that activity. But there are lots of people who disagree with me. I think answering whether it's safe isn't as simple as yes or no and would depend an awful lot on your own practices.
