Are people drinking distilled water? It lacks minerals. I apologize if this seems like a silly question.

Some people certainly do, but mostly it's a joke about marketing.
It came up as a way to stack functions while making biochar-in the summer.
What to do with the otherwise wasted heat?
Distill water and sell it!
Actually, adding humic acid,sea salt,Creeping Charlie extract, and/or whatever to the water would be a great gimmick.
"Our hand wrought water is filled with everything you need and nothing you dont"

Someone is selling bottled hops water at our farmers market.
It's pricey, tastes like ass, thus people who buy it are already sold on liking it,emperors new cloths,don't yah know...

I don't know.  Around here there's much stronger demand for free-range, humanely-raised and antibiotic-free broccoli.

This reminds me.  I once worked in a retail store that had an upscale food section.  There was a line of crackers that had the words "Hand-baked" on the box.  Now how in the world do you hand bake something?  Rub your hands together to create friction and thus heat, and then apply them to the dough?  Or, you just mean someone with actual hands put the tray of crackers into the oven?  How artisanal...

As an aside, but I think somewhat related: The vendor next to us at market sells artisanal pastas, including a gluten-free line.  When people are checking it out, she'll ask, "Are you gluten-free?"  You'd be amazed (okay, maybe you wouldn't) at how many people respond "Sometimes."  I always wonder: Like, what, gluten disagrees with you on Tuesdays?  You have intermittent Celiac disease?

Funny! All jokes aside, thinking about what to do with energy from a wood fire and if you were to build a still, you could make all sorts of small batch "artisanal" vinegars. A lot can be done with a vapor recovery system.

Moonshine, brandy, schnapps, essential oils, are where the most profits would be, distilled water is already available in grocery stores.
The moonshine they sell in the liquor stores really isn't shine at all because taxes have been paid, and shine is all about no taxes.

essential oils are wonderful since you don't need a distiller's license, just a state that allows you to own a distilling device (or you could be a laboratory).

For those living in pristine coastal areas, produce sea salt!  I came to Permies looking for tips on how to do this, as I'm thinking of giving it as Christmas gifts, and this was the first thread to pop up.

In my experience distilled water is very good for me. It does not remove essential minerals only excess...for me. It is hard to make and have enough to store for later...for me. It will clean out organs of junk...for me. So maybe it isn't really a dumb idea. People can also use it in batteries and such. Maybe check out the store prices and see if it makes sense to under cut those. It has big health benefits....in my opinion.

edit- Also try making it without contact with any plastic or hazardous metals. You can find distill machines online but most have all sorts of contact with plastics. People that seek out distilled water will want glass or stainless steel or similar contacts not plastic bottles and tubes....at least I would.
