I bet that title will get some attention

I have a pressure canner that has a gauge and jiggler.  It came with a 15 psi jiggler and an adjustable jiggler that can do 5 psi if it's all by itself or 10 if you add a metal donut washer to it .  That's great if you're below 1000 ft of elevation where 10 psi is good for canning.  I'm at 1200 feet so I need to do 11 psi.  I'm thinking I could just add a washer to the 10 psi adjustable jiggler to give it a bit more weight and hopefully hold things at 11 or 12.

Has anyone tried this?

Is there any way you can contact the manufacturer? That might be your best bet for good info.

Depending on what brand of canner you have, it might already be okay. I have an All-American pressure canner which has a weight and a gauge. The gauge reads 11 PSI when the 10 lb jiggler goes off. I've heard that's somewhat common, but you might want to check. No reason to go messing with it if it's already where you want it.

Depending on what you are canning, time and pressure often need to be adjusted.  If your unit is already adjustable, it might simply be a matter of ordering the right weight (aka jiggler) for the steam spout from the manufacturer,  I would definitely contact them.  They will be able to tell you if your unit can withstand the added pressure. I have great respect for pressure cookers and the sheer physics involved in using one,

Full disclosure:  I lost a great aunt to a canning accident because she refused to stop using the ancient 1930's pressure cooker and it finally blew.  Nothing quite like seeing a kitchen shredded by metal and glass shrapnel and then doused in boiling liquid.  Not pretty and I never want to see a repeat.

Dig a *really* deep hole?  (Sorry Mike, I couldn't resist!)

My canner has a rubbery button thing that's designed to blow out if the pressure exceeds the recommended amount. It then splatters the contents on the ceiling. So... I'd also suggest talking to the manufacturers and at the very least, do some tests out doors with safety equipment on.

Good point Ben, I'm not sure what pressure the 10 psi jiggler is actually jiggling at.  I'll have to do a practice run some time to see.

As for it blowing up, the canner is at least good to 15 psi so I'm just trying to find a way to easily run it at 11 or 12.

In theory, yes.  For liability reasons, everyone should say no.
