The first: There is an active thread with the original poster's username is greyed out. I thought that meant he/she had 'blocked' me (if that's even possible), but I looked at the thread when logged out and the username is still greyed out. Then I thought the OP  has been banned. But the OP still posted and there's no notice they've been banned (if that's even identified). So, my question is “What does the greyed out username mean?"

Also, I did a dumb thing (Like THAT'S never ever happened.) You know how in the right column there's a list of 'Top Forums.' And you also know how we can 'x' out a forum and this deletes it from that list? Um, is there any way to get it back on the list?

Probably their name doesn't match the naming policy.

Grayed out like this one? If so, it is because it is a "wiki."
https://permies.com/wiki/154821/Zach-Loeks-author-Edible-Ecosystem

If not, could you find a link to it? It could be a glitch. Sometimes things appear differently on different systems, even.

That's a situation where their name didn't match the naming policy.  Once they fix it up, it won't be greyed out anymore.

Go to the critters category:  https://permies.com/c/critters

On the right side is "rate forums"  ---  I think the forum that is no longer showing up is rated zero.  Set that to a higher number.

Nope, the forums that aren't showing up are "Growies" and a couple of others that I mistakenly x'd out.  I already had rated Growies 5 stars. I x'd it afterwards.

ah I see.
the x makes all forums in that category go to zero acorns.  So you have to go like Paul said and manually add acorns back again.
