I know you can sprout just about any seed and eat it as long as the plant isn't poisonous.  Take a look at this list and let me know if you have other suggestions for seeds you can sprout in a jar.

There is a lot of threads on permies about sprouts, the last one that was about types of seeds that make sprouts was this one:

I've always heard you should cook kidney bean sprouts cause they have a toxin in them that some people can be quite sensitive to.

There's a packaged Indian snack food I buy occasionally that has sprouted cucumber seeds in it.

Thanks, I think you are correct.  some kind of anti-nutrient.  The cucumber seeds sound good.
