PNW already have low GDD and don't really need shading is there a specific reason why you want to climbers in your 10ft dwarf fruit trees. Is it because it's a male tree or it is infected and not productive if so, annuals in the squash family and plants from the legume family sounds grade. Artic kiwi only gets to 10ft so they would also be a good fit.
Iterations are fine, we don't have to be perfect
