This is the second time I've come back from the garden with my weeds and thinnings to make a quiche! Lambs quarters, chickweed, dandelion greens, beet greens and spinach all got chopped up with a stalk of garlic I snapped off by mistake. Six of our duck eggs, a cup of local cream, a half cup of gruyere, salt, pepper and 40 minutes in the oven at 350F and my daughter and I had a nutritious after school snack.
LOL, I hadn't really thought of it that way. I was just excited at creating something nutritious and tasty from what others would consider waste. We have an awful lot of duck eggs at the moment to use up too. Sadly my husband doesn't care for eggy flavored things so he's not a big help. I'd love for people to share their favorite quiche fillings here.
