Anyone else getting ready to start tapping birch? I got our spiels and buckets out and ready this morning. It will be another week or so before the sap starts running I like to be ready. We just tap enough to drink it makes a good spring tonic. We don't make to often it just take to much time for the end results, about 100 gallons of sap = 1 gallon of syrup.
We have a lot of birch around my neck of the woods and I've heard that a kind of wine can be made from the sap. I may try this come on to spring.

that sounds pretty good. Do you know what kind of yeast to use? Up this far (61N) sap flow isn't for a couple months, yet, but I would love to make some wine with the excess that I don't drink fresh.
I'm not sure exactly what type of yeast but it would have most likely been typical wine yeast you can buy in those little packets. Thats what he uses for the other types of wine he makes.

Thorn apples are good. I taped a few different trees this year I got good drinking sap but I especialy like the ants that come to drink the sap. Ther'er sweet and sour I just like them off the bark yum.
