Well, good news is that there are over 200 species of edible bamboo and you are bound to find one that is yummy. I would be careful about eating the raw bamboo because bamboo's bitterness comes from taxiphyllin which becomes hydrogen cyanide. Therefore, I advise boiling the shoots in
