Here is an interesting series from the BBC about a huge archeological experiment. Over 25 years, they are rebuilding a castle using techniques that would have been used in the Middle Age.

They show how they split the stones, how a carpenter would have built a cabinet without nails or glue (or a saw), how they made pulleys, rope, and mortar.
