NPR has a story on their website about corn smut. The fungus has been discussed here before, but it's been a while and I thought it worthwhile to post a link to the article. I've never heard of the stuff before, but it sounds delicious. There's a local producer here in Oregon that sells it for $20 a pound frozen; less than truffles, but still spendy.

This is the first year that I caught corn smut at a young enough age to taste great... Once it turns black inside I don't find it pleasant to eat, but it's quite enjoyable when it's still gray inside.
