How do I start a rooftop Herb business in the city?

I live in Brooklyn, NY and I want to start an herb growing business on my rooftop. How do I start and what do I need to think about?

How do I do research to find out what herbs are in demand in my area?

How do I market myself and approach potential restaurants, stores, and people to buy my herbs?

What are the best value added ways I can process my herbs to raise profits?

What are ways that I can permaculture it out? I'll probably create a rain barrel. Any other ecological, multi functional elements I can introduce?

First of all How much space have you got ? How much weight can you put on the roof top ? What herbs are you thinking of growing ? Where will you sell them ? How many containers can you get ? How will you source soil ? Water ?
lots of questions before you start .

I have quite a large roof, but I was envisioning starting to plant in flats on tables in about a 100 square foot area.

I'm not sure where to sell them, that's why I'm asking. I was thinking restaurants, stores, and directly to people (maybe a CSA model)? Any other ideas would be great, and how to market?

I was thinking of making my own potting soil mix and creating a rain barrel for water.
