Help me with my espalier orchard design

I have put in a trellis for an espalier orchard, my plan is to grow two dwarfing fruit trees every 3m (there is 3m between each pole)

I am planning of doing 20% pears and 80% apples

I am looking to get 2-3 varities of pear and 6-7 varities of apples

When growing a high density orchard like this, what is the best way to place fruit tree varities?

I have been thinking that I should try and put cultivars which ripen at the same time of the year in the same rows for convenience when picking

Should I avoid putting two of the same cultivar next to eachother?

What's the best place to put the pears? In a row of their own, or interspersed randomly throughout the apples

Briefly, he puts his rows together according to ripening time, and alternates fruits, so that no two of the same fruit are next to each other. This helps prevent spread of diseases. His orchard is a successful business venture.
