Mint: A Tasty Summer Treat

If any of you have read my previous posts, you'll know that the previous owner of this house planted mint. And now I have a mint garden that's in danger of taking up the backyard!
Anyway, with all this mint I'm trying to think of recipes that use it up.

In case you might have herbs that are taking over, (it doesn't have to be mint) I thought I'd share.
Cut 4 or 5 stalks of mint (or other herb) and wash. Put in a jug of water and leave it in the fridge over night. In the morning, you have a delicious minty cool drink!
My aunt told me that mint has cooling qualities, but I don't know if that's substantiated. In any case, it's yummy and I'm going to try it with lemon balm next!

mint tea is great for upset stomachs. It's also fabulous when brewed with sun tea with lemon. Nummy.
