Being a lazy omnivore and noticing that birds leave their droppings only on the leaves and not on the flowers of the yucca plant, I decided it was best to leave the bugs on the flowers. If I were tying to make a vegan yucca flower saute, I'd have to wash the bugs off which I'm pretty sure would kill most if not all of them making it not so much of a vegan dish after all. Additionally, living in the desert, one tends to be more conservative of water. Since I pick the flowers fresh, they haven't been out long enough to accumulate much if any dust and birds seem to perch on the leaves (which are lower than the flowers). I sauteed with butter since I am out of olive oil. I chopped the pistols and stamens finely and started them cooking and then tossed in some chopped onion and when the onion was translucent tossed in the petals. I also tossed in a tiny bit of greens from some sort of mustard plant that is growing out here. I could have put in lots more mustard leaves since I couldn't even taste them in the dish.
