Today is the first of August, and it also marks an old seasonal holiday called Lammas, which means "loaf mass". The day celebrates the first grain harvests of the season, and one traditional part of the celebration aside from a feast is baking bread. I like to bake bread, and I've always used either a bread machine or a stand mixer when making doughs. Today I tried making a dough by hand using no tools aside from a bowl. It is a simple recipe of flour,
water, salt and yeast and was an overnight rise type of bread. I made the dough last night and baked it this morning in a
cast iron dutch
oven inside my regular oven. I think it turned out alright!
