How dense should I sow nitrogen fixing legumes?

I bought several types of beans, peas and lupines to use as cover crops in my fruit tree guilds.

In addition to nitrogen-fixing, the legumes should shade the soil and maybe provide some edible crop.

In our mediterranean climate and alkaline soil, how dense should I sow the seeds?
