Runner Bean Tubers

Can anyone tell me about How the tuber of the runner bean is prepared in the kitchen?  And/or harvesting time information for them?  I have been growing them in central Italy, and I think with all the water they got last year, I might have some nice tubers coming along. Thanks!

From what I have read I feel you can treat them like any green bean. I feel this works for harvesting.  And for cooking just use any green bean recipe.  When we want dried beans we leave them on the vine to dry.

They are referring to the bulbous root, not the bean.

What can you tell me about the tubers?  Are they edible?  When do you harvest them?  

Now that you piqued my curiosity, how do you cook them?
