Usually I cook chard stems for 7 mins, discarding the cooking liquid to get rid of oxalic acid.
Would you cook chard stems before fermenting?

I've never done it myself but a friend makes lovely pickled chard stems, I think they would be horribly soggy if you boiled them beforehand.
