Hi, I've had this question on my mind for years, and just never gotten around to manifesting it (until now).

Has anyone had any luck making bread with the pollen or refined tuber(corm) flour from the cattail plant?

I've used  both to thicken up stews before, but haven't had the chance to explore the rising or binding qualities of either.

Works great! Some lovely recipes online!

Edit: by "works great," I mean the finished bread is great, but as for binding properties, you'll find it lacking.

I've only ever used cattail pollen as a component in pancakes. It didn't seem to be a binder, though. I use oat flour in pancakes as a binder, and mixing it with cattail pollen seemed to lessen its binding effect.

Since it doesn't have gluten, I don't see that it would help with leavening at all - by which I mean, it's not going to trap air bubbles like a gluten containing flour would.

I can't say anything about the tubers, having never used them. I've got a cattail pond right next to my house, so I should probably get on that! 🙄
