Daily 'burping'. 10 days in the dark then transfer to fridge w plastic wrap over jar mouth so rings don't discolor/rust.
1 tsp salt, garlic cloves (I used small Torpedo Onions), pepper corns, chili flakes + 1 cinnamon stick (weird but it's delicious).
Crunchy & yummy for 1 year refrigerated.
'Brine' can be reused 3-5 x. New veg only needs 2 days fermenting in dark.
