I step out of the shower and wipe the mirror every morning despite the space being vented with a ceiling fan. The grey water goes to a bed right outside the bathroom wall. what if I replaced the ceiling fan with a dehumidifer that drained into ollas?

What if you directed the exhaust into the olla, so that it could condense in place?
