I have a very nice dehydrator that I purchased from Cabela's and am happy with. A lot of 5 institutional food warmers came up on an auction and I thought they might make a good dehydrator or the body of a solar dehydrator. Insulated,120 volt power adjustable heat if you were to use the power, racks for the trays already installed. I'll watch and see how the bidding goes.

I have one that I purchased intending to make it into a smoker.
I make lots of plans, with poor follow through, so that never happened...

A low temperature oven/dehydrator would probably be better use anyway.
With sufficiently fine tempture control it could be used to proof bread, start seeds, or even sous vide meat.
The precise consistent and long term application of heat is one area that electrical resistance heating might actually be best at.

Oh yes, the project conundrum. The evil file card box my wife has placed in the mudroom. Divided into four sub groups: 1/2 day or less, full day, nice weather, shitty weather. Should I ever be caught loitering out it comes. It is surprisingly helpful, but I refuse to say that outloud.
