Does anyone know of a good book/video/resource on how to build and operate one?
I searched permies using the whole site function and the forum search and found nada.
Searching on Amazon, every book available had at least one comment that said something like "this book doesn't give detailed plans on buidling or operating a smoker/smokehouse"
So I thought I would ask here.

I printed out the pdf, I have two questions:
1) what is the removable bench for?
2)What is the University of Tennessee/USDA thing in the bottom right for? Is this a USDA approved plan then?

My best guess on the bench would be a dry place to work while prepping the meat (salting, cutting, stuffing, hanging, etc.).

The Extension Service is funded (at least in part) by USDA, so yes I'd say it's approved in some way.

It doesn't mean that it is USDA approved.

The USDA is a main channel for funding the Land Grant Universitie's "Extension Agents" program.
Through the years, USDA has funded many university programs to design chicken coops, hog pens, milking barns, and yes, smoke houses, among other buildings that can help a farmer to efficiently carry out the operations of his farm.

Many of these plans are readily available to anybody with internet access.

Yes, precisely. That was the site I was thinking of, but couldn't find it in my bookmarks.

Tons of good info there. One of the best collections I have seen. Old stuff/new stuff.
