A friend of mine is hosting a two day foraging and herbalism course this year, Friday and Saturday, June 23-24. It'll be a full day each day, foraging and making stuff like tinctures. I forgot the exact cost but it'll be about $200. If you're interested, send me a PM and I'll pass along the contact info. Specifically, they will be meeting in Graham and Eatonville.

It depends on what is in season and growing. The instructor is planning on scouting out stuff a couple of days before. I think the plan is to go to the Pack Forest in Eatonville.
